A Great dish for winter Sunday brunch. Goes well with bread and as a side dish for your meal.
Ingredients:
- 1 Eggplant sliced
- 2 Zucchini sliced
- 2 Medium onions sliced
- 2 Medium tomatoes sliced
- Half glass of olive oil
For the sauce
- 2 Garlic cloves
- Pinch of hot green chili
- 1 can of grinned tomatoes
- 1 glass of boiled water
- Pinch of salt
- Pinch of black pepper
- Pinch of paprika
Steps:
- Warm the olive oil in a frying pan
- Fry each vegetable separately and put them aside
- Fry the green chili pepper and the garlic
- Add the grinned tomatoes can and steer it all
- Add the boiled water and steer for 3 minutes
- Add the fried vegetables into the pan
- Cook for 10-15 minutes until all veggi are soft
- Preheat the oven on 240 degrees
- Put the frying pan in the oven for 20 minuets
- Let it chill for 10 minutes

Cook for 10-15 minutes and then put in the oven (220 degree) for 20 minutes
Take out of the oven and chill for 10 minutes.
